Consequently, anyone wishing to open or modernise a specialist catering establishment often struggles to consistently convey the intended character of such a venue through its décor and offering. Colour schemes play a key role in this regard. The themes of "Restaurant Polarities" and its colour collection for restaurants in Italy, Spain, Germany and France present the viewer with a wide range of colour options. The significance and symbolism of these colours have been clearly highlighted. Furthermore, the restaurant concepts, which operate in a highly competitive market, have been compared. Based on this, suggestions for improvement have been sought.
